🍊 COS 2019 IGT Terre Siciliane ‘Pithos’ Bianco Sicilia

A dense and multilayered orange wine from Vittoria in southern Sicily. Get ready for a brilliant yellow color in the glass, medium to full bodied on the palate with wax, ripe stone fruit, savory lemon and a little barnyard.

Cilia, Occhipinti, and Strano, three friends who created the COS estate in 1980, and would go on to define the wines of Vittoria. The story begins with the gift of vines to the trio by Cilia’s father. From the beginning, they worked holistically in the vineyard without the use of synthetics or chemicals, a rare move in the 80’s. This paved the way to a full embrace of Biodynamics in the early 2000’s, followed by an organic certification in 2007. Seeking to further this unvarnished approach to winemaking, Giusto Occhipinti acquired several clay amphorae from Spain, along with concrete tanks and large casks for aging. The vineyards themselves are a mix of red clay and limestone, which helps to retain nutrients while providing lift and balance to their grapes. This is the ‘Pithos’, Greek for amphorae, and is 100%n Grecanico from the Fontane vineyard. This wine is naturally made, with spontaneous fermentation followed by extended contact on the skins before aging in amphorae, resulting in a textured and full-bodied orange wine.
