Located in the historic area of Spolento in Umbria is Fongoli, one of the leading practitioners of biodynamic winemaking. Angelo Fongoli is a 4th generation farmer and agronomist who transformed his families estate into a winery of renown. His approach embraces natural plant/animal preparations intended to promote biodiversity throughout his vineyard, a laborious process known as biodynamics. It’s all about harnessing a sense of place in the wines and Fongoli achieves this with elegance. This is their Trebbiano Spoletino, a very distinct wine in Umbria. The grapes grow on large tree-vines, for maximum air circulation and exposure to the sun. The wine itself is an orange wine, a result of 14 days on the skins, giving the wine a deep amber color and powerful aromas. It is fermented in a large open wooden vat without any temperature control and goes until completion and is bottled without any fining or filtration.
