Wrapping your palate in a warm blanket, this slow-sipping digestif is a complex vermouth from locally foraged botanicals in Friuli. Jerbis carefully blends 25 different herbs and roots, first macerated individually, then bottled together unfiltered. Infused with the winter spice of Christmas.
Fred Jerbis is a man obsessed with locally foraged botanicals from the rolling hills of Friuli in northeastern Italy. Almost all the herbs and roots used in his product are found within a 50km radius of his home in the town of Policenigo. After foraging, he likes to experiment with each individual botanical in a laboratory-like setting, playing with various temperatures and styles of maceration in order to extract pure expression. The color comes from a touch of caramel and he bottles unfiltered for a fuller experience, making this aperitif/digestif a cool pairing with winter and the various sweet breads, cakes and cookies we tend to fill ourselves with before and after dinner.

PRODUCTION: The base wine is aged for a year in tank with some ullage. Extraction is by cold maceration of dried herbs, and hot maceration, in nearly pure alcohol. 25 different botanicals are prepared individually, including three different varieties of wormwood, two of orange, gentian root, cinchona bark and angelica.
