Historic Barolo house Scarpa’s Vermouth Bianco is a full, layered and textured vermouth, showing a slightly heavier sweetness than your typical Bianco. Excellent in cocktails, or on its own with good tonic water, bitters and a citrus peel. A perfect accompaniment to Sunday brunch.

VARIETAL: 80% Cortese from Canelli, Santo Stefano Belbo and Cossano Belbo and 20% Moscato d’Asti DOCG

APPELLATION: Pancalieri, Torino

REGION: Piemonte

BOTANICALS: wild angelica root, bitter orange peel, wormwood, green cardamom seeds, quinine bark, chirata bough, coriander seeds, horse-heal root, licorice.

PRODUCTION: All the herbs are dried and then ground with an old hammer mill. The ground herbs are placed on a grill inside a closed loop infuser. The infusion or cold extraction takes place for 20 days at the room temperature. During the infusion an hydroalcoholic solution percolates on the herbs and allows to extract all the herbs’ aromas. When the liquid extract is ready it’s left for 10 days in order to naturally decant the solid parts.
