Valle Unite is a cooperative in Costa Vescovato, a small area in southeast Piemonte. They are among Italy’s first successful cooperatives, producing wine the natural way from a range of indigenous grapes. At Unite, biodiversity is king and this 100-acre farm is busy with beehives, orchards, farm animals and of course, the growing of grapes. They produce wine solely from native yeasts present on the grapes and in the cellar and prefer to let the fermentation process unfold of its own accord. The resulting wines are pure and speak of place, without sacrificing the experience in the glass. This 100% sparkling Cortese refered to as ‘Il Brut and the Beast’, is organically farmed with biodynamic preparation from 30-year-old vines. It spends 30 days fermenting with native yeasts in steel, undergoing a secondary fermentation in the bottle without any filtration.
